Protect the Flavor
Air is the enemy of freshly roasted coffee.
Home Town Coffee Roasters prefers to keep the coffee in whole bean form because it retains and protects the flavor best. Once the bean has been ground, more area of the bean is exposed to the enemy (air) and flavor begins to diminish immediately.
The absolute best way to enjoy freshly roasted coffee is to store beans in an airtight container, in the cool darkness of your pantry or cupboard, and to grind the beans just before brewing.
*Long-term storage in an airtight container in the Freezer is okay; it is best not to store coffee in the refrigerator due to the high humidity.
A little note about coffee:
Right after roasting, the coffee must "de-gas". It releases CO2 and, if closed up tight at this point, the CO2 may have a negative effect on the flavor.
So, a good 12 hours to de-gas then the coffee can be packaged.
Once packaged the coffee goes into a "resting" phase.
While the coffee can be enjoyed at this point, it is actually at it's best 7 to 10 days into the resting phase.
